Before coffee reaches a grinder, brewer, or espresso machine, it begins as the seed of a fruit growing on a tropical plant. The fruit must ripen, be harvested, processed, dried, milled, sorted, transported, roasted, and packaged before you ever scoop the first beans from the bag.

Every stage matters.

A farmer can grow exceptional coffee only to lose quality through careless harvesting. Perfectly ripe cherries can be damaged by poor fermentation or uneven drying. They begin green.

As they mature, many common coffee varieties turn:

🧺 Stage 3: Coffee Cherries Are Harvested

Once the fruit reaches the appropriate ripeness, harvesting begins.

How coffee is harvested depends on factors including:

Harvest doesn’t necessarily go directly into processing.

Producers may first remove:

The farmer has harvested a fruit.

The industry needs the seeds inside that fruit.

Coffee processing describes the steps used to separate those seeds from the surrounding cherry and prepare them for drying, storage, and eventual roasting.

Three terms appear particularly often on specialty coffee bags:

  • Washed
  • Natural
  • Honey

There are also many variations and experimental methods.

Processing doesn’t single-handedly determine flavor, but it can have a substantial influence on the final cup.

💦 Washed Coffee Process

The washed process, sometimes called the wet process, removes much of the fruit before the coffee seeds are dried.

A simplified sequence looks like this:

  1. Ripe cherries are harvested and sorted.
  2. A pulper removes the outer skin and much of the pulp.
  3. Sticky mucilage remains around the parchment-covered seeds.
  4. Fermentation and/or mechanical demucilaging helps remove that mucilage.
  5. The coffee is washed.
  6. The parchment coffee is dried.
  7. The parchment is removed later during milling.

Washed coffees are often associated with a relatively clean, defined cup profile.

You may find it easier to distinguish acidity, floral qualities, citrus, fruit, or characteristics associated with the coffee’s variety and growing region.

But don’t interpret “washed” as a flavor guarantee.

A washed Brazilian coffee can still taste dramatically different from a washed Kenyan coffee because origin, variety, altitude, soil, climate, roasting, and countless other factors remain important.

☀️ Natural Coffee Process

The natural process, also called the dry process, takes a very different approach.

Instead of removing the fruit immediately, the entire coffee cherry is dried with the seeds still inside.

A simplified process looks like this:

  1. Cherries are harvested.
  2. The fruit is sorted and cleaned.
  3. Whole cherries are spread on patios, mats, or raised drying beds.
  4. They are regularly turned or moved.
  5. The cherries slowly dry.
  6. Once adequately dried, the hardened fruit surrounding the seeds is removed during milling.

Natural processing is one of the oldest methods of producing coffee.

Because the seed remains inside the fruit throughout drying, natural coffees are often associated with characteristics such as:

  • Pronounced fruit
  • Berry flavors
  • Tropical fruit
  • Wine-like qualities
  • Greater perceived sweetness
  • Fuller body

Again, those aren’t guaranteed flavor notes.

A carefully managed natural process can produce extraordinarily clean, complex coffee.

Poorly managed drying can produce unwanted fermentation, mold, or other defects.

The word natural doesn’t automatically mean better, worse, organic, or unprocessed.

It describes what happened to the coffee fruit after harvest.

🍯 Honey-Processed Coffee

The name honey process causes plenty of confusion.

There normally isn’t any honey involved.

Instead, the term refers to coffee that has its outer skin removed while some of the sticky mucilage remains around the parchment during drying.

Because that mucilage feels sticky and sugary, the method became associated with the word “honey.”

The general sequence is:

  1. Harvest ripe cherries.
  2. Remove the outer fruit.
  3. Leave a chosen amount of mucilage around the seeds.
  4. Dry the coffee with that mucilage still attached.
  5. Remove the remaining dried layers later during milling.

Honey processing occupies territory somewhere between washed and natural approaches, although real-world methods vary considerably.

You may encounter terms such as:

  • Yellow honey
  • Red honey
  • Black honey

Those descriptions can refer to differences in processing and drying practices, but terminology is not perfectly standardized across every producer and country.

Honey coffees are often described as combining some of the clarity of washed coffee with some of the sweetness or fruit-forward character associated with naturals.

🧪 What About Anaerobic, Carbonic Maceration & Experimental Coffee?

Modern specialty coffee has expanded far beyond three simple processing categories.

Producers increasingly experiment with controlled fermentation techniques, including coffees marketed as:

  • Anaerobic
  • Aerobic
  • Carbonic maceration
  • Extended fermentation
  • Thermal shock
  • Co-fermented

Some processors carefully control variables such as:
