Decaf coffee can seem almost contradictory. Coffee beans naturally contain caffeine, so how can a roaster produce a cup that still tastes like coffee while removing nearly all of the stimulant?

The answer is decaffeination—a process performed on green, unroasted coffee beans before they are roasted. Rather than growing ordinary coffee and somehow removing caffeine after brewing, processors extract most of the caffeine from the beans while trying to leave their flavor-producing compounds intact.

The Swiss Water Process is probably the best-known water-based method of decaffeination.

Despite its name, the commercial Swiss Water Process is operated by a Canadian company. Its approach relies on water, temperature, time, a coffee-derived solution called Green Coffee Extract, and carbon filtration rather than adding an organic solvent to the beans.

How the Swiss Water Process Works

Green coffee beans are first cleaned and hydrated.

They are then placed in contact with Green Coffee Extract, or GCE. This liquid contains many of the water-soluble compounds found naturally in green coffee but has had its caffeine removed.

Because the surrounding liquid already contains coffee’s soluble flavor components, caffeine preferentially moves out of the beans and into the solution through diffusion.

The caffeine-containing liquid is then passed through specialized carbon filters that capture caffeine.

The refreshed Green Coffee Extract can be circulated through additional coffee until the desired level of decaffeination has been reached.

Finally, the beans are carefully dried.

Swiss Water states that its process removes 99.9% of caffeine.

Why People Choose Swiss Water Decaf

Swiss Water decaf is popular with specialty coffee drinkers because the process is designed to preserve the character of the original green coffee.

It is also attractive to consumers specifically looking for decaf produced without methylene chloride or ethyl acetate.

You’ll often see “Swiss Water Process” prominently displayed on coffee packaging because it has become a recognizable selling point.

Another fascinating method uses carbon dioxide under high pressure.

This technique takes advantage of what is known as supercritical carbon dioxide.

Under the right combination of temperature and pressure, CO₂ enters a state in which it behaves partly like a gas and partly like a liquid. In this state, it can act as an effective extraction medium.

How CO₂ Decaffeination Works

Green coffee beans are first moistened.

If you’ve been shopping for specialty decaf recently, you may have encountered coffee labeled “Sugarcane Decaf,” “EA Decaf,” or “Ethyl Acetate Process.”

These descriptions generally refer to the same basic approach.

Ethyl acetate is an ester that can be produced through fermentation and is also naturally present in fruits and other foods. In some coffee-producing regions—especially Colombia—the ethyl acetate used for decaffeination may be derived from sugarcane fermentation.

That explains the popular Sugarcane Process name.

How the Sugarcane Process Works

Green coffee beans are typically steamed or otherwise hydrated to increase their permeability.

The beans are then exposed to an ethyl acetate solution.

Ethyl acetate acts as a solvent for caffeine, allowing caffeine to move out of the beans.

After sufficient caffeine has been extracted, the beans undergo additional steaming and cleaning to remove the ethyl acetate before being dried and prepared for roasting.

What Does Sugarcane Decaf Taste Like?

Sugarcane decaf has become particularly popular in the specialty coffee world.

When the process is performed carefully on high-quality beans, the resulting coffee can retain substantial sweetness, body, and origin character.

You’ll commonly encounter Sugarcane Process decafs from Colombia, where both coffee and sugarcane production are well established.

It is worth remembering, however, that describing this method as “natural” can occasionally cause confusion. Ethyl acetate is still a chemical compound and functions as a solvent during decaffeination, regardless of whether it was produced through sugarcane fermentation.

One of the traditional commercial methods uses methylene chloride, also known as dichloromethane.

In this method, methylene chloride functions as a solvent that selectively dissolves caffeine.

How the Methylene Chloride Method Works

The green coffee beans are hydrated or steamed so caffeine can be extracted more easily.

Methylene chloride is then used to remove caffeine either through direct contact with the beans or through an indirect extraction process involving water removed from the coffee.

Once decaffeination is complete, the beans undergo additional steaming and drying.

Because methylene chloride has a relatively low boiling point and coffee is subsequently roasted at much higher temperatures, processing and roasting remove the solvent from the beans.

Is Methylene Chloride Decaf Legal in the United States?

Yes.

Under current U.S. regulations, methylene chloride may be used to extract caffeine from green coffee beans.

Federal regulations specify that methylene chloride residue must not exceed 10 parts per million (0.001%) in decaffeinated roasted coffee or decaffeinated soluble coffee extract.

Some coffee drinkers nevertheless prefer to avoid solvent-based decaffeination entirely, which is one reason processes such as Swiss Water and CO₂ have become attractive alternatives.

There isn’t one universal answer.

The quality of your cup depends on much more than the decaffeination process.

The quality of the original beans, growing region, processing method, roast profile, freshness, grind size, water quality, and brewing technique can all have major effects on flavor.

Decaf coffee still generally contains a little caffeine.

The National Coffee Association says a typical cup may contain around 2 milligrams, while the FDA gives a broader typical range of approximately 2 to 15 milligrams per 8-ounce cup.

Actual caffeine levels can vary according to the beans, decaffeination process, amount of ground coffee used, brewing method, and serving size.

So if you’re drinking a large mug—or several cups of decaf throughout the day—the caffeine isn’t necessarily zero.

A roaster willing to tell you where the coffee came from and how it was decaffeinated is often a better starting point than a bag offering no information beyond “Decaffeinated Coffee.”
