
Every cup of coffee begins somewhere very different from the bag of brown beans sitting in your kitchen. Before coffee is roasted, ground, and brewed, it grows on a flowering tropical plant as a colorful fruit known as a coffee cherry.
And despite the name, a coffee “bean” isn’t technically a bean at all. It is the seed of the coffee fruit.

Arabica coffee (Coffea arabica) is native to Ethiopia, where the species has tremendous genetic diversity. Coffee was later transported from Ethiopia to Yemen, where it became an important cultivated crop.

It is often prized for sweetness, acidity, aroma, and flavor complexity.
Robusta
Robusta is the common name used for Coffea canephora.
The species originated in central and western sub-Saharan Africa and is now grown extensively in countries including Vietnam, Brazil, Uganda, Indonesia, and others.
Robusta plants generally tolerate warmer conditions and lower elevations than many Arabica varieties. Robusta coffee also typically contains more caffeine than Arabica and can produce a heavier-bodied, more intense cup.
Although Robusta was once routinely treated as inferior to Arabica, quality varies enormously. Carefully grown and processed Robusta can produce surprisingly complex coffee.
🍒 How Coffee Cherries Become Coffee Beans
Picking the cherry is only the beginning.
The fruit surrounding the coffee seed must be removed and the seeds dried before they can be stored, exported, and roasted.
Several processing methods are used.
Washed Process
In washed coffee, much of the fruit is removed soon after harvesting.
The coffee is typically depulped, fermented or otherwise treated to help remove the sticky mucilage surrounding the seed, washed, and then dried.
Washed coffees are often associated with a clean, clearly defined flavor profile, although the final taste depends on many additional factors.
Natural Process
With natural or dry processing, the coffee cherries are dried with much or all of the fruit still surrounding the seeds.
Once sufficiently dry, the outer fruit layers are removed.
Natural processing can contribute intense sweetness and fruit-forward flavors, although results depend heavily on careful drying and handling.
Honey or Pulped-Natural Process
Honey processing falls somewhere between washed and natural methods.
The outer skin is removed, but some of the sticky mucilage remains on the coffee while it dries.
Different producers use the term in slightly different ways, and the amount of mucilage retained can vary.
Processing doesn’t simply remove the coffee seed from the fruit. It can also have a major influence on the flavors that ultimately appear in the cup.
🌞 Drying and Milling the Coffee
After processing, coffee must be carefully dried.
Drying reduces moisture so the coffee can remain stable during storage and transportation. Depending on the farm and region, coffee may be dried on patios, raised beds, mechanical dryers, or through a combination of methods.
The dried coffee then goes through additional milling and sorting.
Layers surrounding the seed are removed, and the beans may be separated according to characteristics such as size, density, or quality.
At this stage, the result is what the coffee industry calls green coffee.

As green beans are heated, a series of chemical and physical changes takes place. The beans lose moisture, expand, darken, become more brittle, and develop hundreds of aromatic compounds.
Roasting can highlight different qualities in a coffee.
A lighter roast may preserve more of the bean’s origin-specific acidity, floral character, and fruit notes, while darker roasting tends to emphasize flavors created during roasting itself, including deeper caramelized, bittersweet, smoky, or toasted notes.
Neither roast level automatically means better coffee. The best choice depends on the beans, the roaster’s goals, and your personal preferences.
