☕ Are Coffee Beans Actually Beans?
Botanically speaking, no.
Coffee beans are seeds.
A ripe coffee cherry normally contains two seeds positioned with their flatter sides facing one another. Once the fruit and protective layers surrounding those seeds have been removed, they become what the coffee industry calls green coffee beans.
Occasionally, only one rounded seed develops inside the cherry rather than two. This is called a peaberry.
The pale green seeds look very different from the dark brown coffee beans you may be accustomed to seeing. Their familiar color, aroma, and many of their characteristic flavors develop later during roasting.
🌿 Arabica vs. Robusta Coffee Plants
There are many species within the Coffea genus, but two dominate commercial coffee production:
Coffea arabica
Coffea arabica, commonly known simply as Arabica, is the most widely cultivated coffee species.
Arabica originated in northeastern tropical Africa and naturally occurs in upland environments. The plants generally favor relatively mild temperatures and are commonly associated with higher-altitude coffee-growing regions.
Arabica coffees are extraordinarily diverse, but they are often prized for their aromatic complexity, sweetness, acidity, fruitiness, and floral characteristics.
There are also many Arabica varieties, including famous names such as Bourbon, Typica, Caturra, SL28, and Gesha.
Coffea canephora
Coffea canephora is the species commonly associated with Robusta coffee.
Robusta generally tolerates warmer growing conditions and lower elevations better than Arabica and tends to contain more caffeine.
Its flavor is frequently described as stronger, heavier, earthier, or more bitter than many Arabica coffees, although high-quality Canephora coffees can be considerably more complex than that description suggests.
Robusta is particularly important in espresso blends and instant coffee.
🌎 Where Do Coffee Plants Grow?
Coffee is predominantly cultivated in tropical regions around the world.
Most major coffee-producing regions fall within the broad zone surrounding the Equator between the Tropics of Cancer and Capricorn, sometimes called the Coffee Belt.

🌰 Stage 1: Coffee Begins as a Seed
The journey can begin with the very same thing we eventually roast: a coffee seed.
Seeds intended for planting obviously aren’t roasted. Viable green coffee seeds are planted and allowed to germinate.
Young coffee plants are frequently started in protected nurseries, where growers can carefully manage water and sunlight while the seedlings establish themselves.
Once strong enough, the young plants can be moved to their permanent growing locations.
Planting is often timed to coincide with rainy periods so that the developing root systems have access to plenty of moisture.

Producing coffee requires patience.
A newly planted coffee tree doesn’t immediately begin covering itself in cherries.
The National Coffee Association notes that coffee trees generally take approximately three to four years to begin producing fruit, depending on the variety and growing conditions.
During this establishment period, the tree develops its trunk, root system, leaves, and branching structure.
Farmers must manage numerous variables along the way, including:
- Soil fertility

🌼 Stage 3: The Coffee Tree Flowers
One of the prettiest stages of coffee production happens long before the cherries turn red.

The flowers can resemble jasmine blossoms, and their appearance transforms a coffee farm that may have previously been almost entirely green.
Flowering is closely connected to seasonal weather patterns, particularly rainfall.

Slice through a ripe coffee cherry and you’ll discover several layers surrounding the seeds.
Although terminology can vary slightly, the basic structure includes:
Outer skin — the thin exterior of the cherry.
Pulp — the fleshy portion beneath the skin.
Mucilage — a sticky, sugar-rich layer surrounding the inner structures.
Parchment — a protective layer surrounding the seeds.
Silverskin — another thin layer closely attached to the seed.
Coffee seeds — what we eventually call coffee beans.
These layers become particularly important after harvest because different coffee-processing methods remove them in different ways.
🧺 Stage 5: Ripe Coffee Cherries Are Harvested
When the cherries reach the appropriate stage of maturity, harvesting begins.
Coffee may be harvested manually or mechanically depending on the region, terrain, farm size, local labor practices, and type of coffee being produced.
Two broad approaches are commonly encountered.
Selective Picking
Workers pick ripe cherries individually, leaving unripe fruit on the branches to mature.
Pickers may return to the same trees several times throughout the harvest.
This method is labor intensive but allows greater control over cherry ripeness.
Strip Picking
Most or all of the cherries are removed from a branch at one time.
This can be done manually or with machinery.
Mechanical harvesting is particularly practical in regions with large, relatively flat coffee farms where equipment can move between rows efficiently.
💧 Stage 6: The Coffee Cherries Are Processed
Harvesting is not the end of the journey.
The seeds must now be separated from the surrounding fruit and prepared for storage and roasting.
Three broad processing styles are especially important.
Natural Process
In natural processing, whole coffee cherries are dried with the seeds still inside.
The fruit remains around the coffee during much of the drying stage before the dried outer material is eventually removed.
Natural coffees are frequently associated with pronounced fruitiness, sweetness, and fuller flavors, although the final result depends on much more than the processing method alone.
Washed Process
In washed processing, much of the cherry is removed before the seeds are dried.
The coffee commonly goes through pulping, fermentation, washing, and drying before the remaining parchment layer is removed.
Washed coffees are often valued for clarity and distinct acidity, allowing characteristics associated with the coffee’s variety and growing environment to stand out.
Honey Process
Honey processing occupies territory between natural and washed approaches.
The skin and some fruit material are removed, but a portion of the sticky mucilage remains on the seeds while they dry.
Despite the name, no honey needs to be added. The term refers to the sticky texture of the mucilage.
☀️ Stage 7: Green Coffee Is Dried and Prepared
Whatever processing system is used, moisture must eventually be reduced enough for the coffee to be safely stored and transported.
Coffee may be dried on:
- Patios
- Raised drying beds
- Mechanical dryers
- Other carefully managed drying surfaces
The coffee is regularly moved or turned so it dries more evenly.
After drying and milling, the finished raw product is known as green coffee.
At this stage, the beans are firm and pale rather than fragrant and brown.
Green coffee can then be graded, sorted, bagged, exported, and eventually delivered to roasters.
🔥 Stage 8: Green Coffee Becomes Roasted Coffee
Roasting produces the dramatic transformation most coffee drinkers recognize.
As green coffee is heated, an enormous number of physical and chemical changes occur.
The beans:
- Lose moisture
- Expand
- Change from greenish or tan to brown
- Develop hundreds of aromatic compounds
- Become more brittle
- Develop the flavors associated with roasted coffee
Roasting style also makes an enormous difference.
A light roast may preserve more distinctive floral, fruity, or origin-specific characteristics, while progressively darker roasting generally contributes more roast-driven flavors such as caramelization, toastiness, bittersweet chocolate, smoke, or char.
The coffee plant may establish the raw material, but roasting determines how much of that potential ultimately appears in the cup.

After roasting, whole beans are ground to increase the surface area that can interact with water.
The ideal grind size depends heavily on brewing method.

- Espresso generally uses a fine grind.
- Pour-over coffee typically uses a medium to medium-fine grind.
- Automatic drip coffee often falls somewhere in the medium range.
- French press usually uses a coarser grind.
- Cold brew typically performs well with coarse grounds.
