Around 200°F (93°C) is an excellent starting temperature.
The SCA’s two-cup pour-over guidelines specify water at approximately 200°F / 93.5°C.
That doesn’t mean every coffee needs exactly the same temperature.
Lighter roasts may respond well to hotter water because they can be less soluble, while darker roasts may taste smoother when brewed somewhat cooler.
It is also important not to become overly obsessed with temperature.

💧 Step-by-Step Pour Over Coffee Recipe
Here is an excellent starting recipe for two small cups.
Ingredients
- 22 grams freshly ground coffee
- 400 grams filtered water
- Additional hot water for rinsing the filter
Equipment
- Pour over brewer
- Appropriate paper filter
- Burr grinder
- Digital scale
- Kettle
- Timer
- Mug or carafe
1. Heat the Water
Heat your brewing water to approximately 200°F (93°C).
If you don’t have a temperature-controlled kettle, bringing water to a boil and allowing it to settle briefly can work perfectly well for everyday brewing.
2. Rinse the Filter
Place the filter inside your brewer.
Pour hot water through the filter, thoroughly wetting it.
Discard the rinse water.

Start your timer.
Slowly pour approximately 50 grams of water over the grounds, making sure the coffee is evenly saturated.
Allow it to bloom for about 30 seconds.
You may notice the coffee swell and release bubbles.
This is primarily carbon dioxide escaping from freshly roasted coffee.
6. Continue Pouring
Begin adding the remaining water slowly and evenly.
A gentle circular pouring motion can help keep the coffee bed evenly saturated. Try to avoid pouring heavily against the paper filter itself.
Continue until you reach a total of 400 grams of water.
7. Let the Coffee Drain
Allow the remaining water to pass through the coffee bed.
A total brewing time somewhere around 2½ to 4 minutes is a useful starting range, although the ideal time depends on the brewer and recipe.
Remove the brewer once the dripping has slowed significantly.
8. Swirl and Enjoy
Give the finished coffee a gentle swirl before pouring.
Allow it to cool for a few minutes before deciding what it tastes like. Many specialty coffees reveal considerably more sweetness, fruitiness, and aroma as their temperature drops.
🌸 Why Does Coffee “Bloom”?
The bloom is one of the most recognizable parts of pour over brewing.
Roasting produces gases inside coffee beans, particularly carbon dioxide. After roasting, coffee gradually releases these gases in a process known as degassing.
When hot water first hits freshly ground coffee, escaping carbon dioxide can create a foamy, expanding coffee bed.
Giving the coffee a short bloom period helps thoroughly wet the grounds before the main extraction begins.
